Seared Barramundi with Horseradish Sauce

There is nothing healthier than a dinner of fresh fish and a salad.  Just thinking about eating it exudes health and well-being.  If you’re interested in having a well-balanced diet, you should be including fish in your meal plan about twice a week.

It’s understandable that a lot of people don’t like fish.  Maybe it’s the texture, maybe the flavor, or maybe it’s just the thought of eating a sea creature?  Unless you are allergic to fish, you really don’t have a good reason not to eat it.  Kind of like how you don’t have a good reason not to eat your broccoli.

Barramundi Fish

The barramundi fish is also known as the Asian seabass is native to Australia and the Indo-Pacific.  It is one of the most delicious and versatile fish you will find.  I recently had the pleasure of trying this amazing fish when I ordered it as one of my Hello Fresh meals.

The Recipe

The recipe for the seared barramundi & horseradish sauce is simple, quick, and delicious.  This recipe includes the perfect portions to easily make a dinner for four or a dinner for two with leftovers!  It will take you about 40 minutes from start to finish. The Ingredients

  • 24 oz. of Yukon Gold Potatoes
  • 2 Tbsp. of fry seasoning (if you don’t have a favorite, any seasoned salt will work)
  • SnapDragon apples 2-3
  • 2 lemons
  • 4 Tbsp. sour cream
  • 4 Tbsp. mayonnaise
  • 1 tsp of horseradish powder
  • 20 oz. of Australis Barramundi
  • 1 bag of mixed greens
  • Salt
  • Pepper

The Directions

Step 1: 

Roast the Potatoes – Set the oven to 450 degrees.  Wash and dry the potatoes. Cut them into ½” wedges and toss them on a baking sheet with a drizzle of olive oil and 1 tbsp. of fry seasoning and keep them roasting until they are golden brown.

Step 2: 

Marinate the Apples – While your potatoes are roasting halve, core, and thinly slice the apples and place them into a bowl.  Squeeze in half a lemon.

Step 3: 

The Horseradish Sauce – In a bowl combine sour cream and mayonnaise.  Stir in horseradish powder and squeeze in some lemon juice.  Add some salt and pepper to taste.

Step 4: 

Sear the Fish – Pat the fish dry with a paper towel. Season the entire fish with the rest of the fry seasoning or seasoned salt.  Heat a drizzle of oil in a frying pan and cook the barramundi with the skins side down over medium-high heat. 

Cook the fish until the skin is crispy and then flip and cook the other side until the fish is cooked all the way through.  About 4 minutes on each side.

Step 5: 

Make the Salad – Combine the bag of mixed greens with your marinated apples.  Add some salt, pepper, and olive oil and toss.

Step 6: 

Plate the potatoes, fish, and salad.  Add some horseradish sauce to the top of the fish.  You can serve the rest of the sauce as a side for dipping the fish or potatoes.  Enjoy!
